Aida Garifullina’ s “Super Cake”
300g dried apricots, prunes, raisings and walnuts (you can also use less)
329g of butter
350g of sugar
1kg of Sour cream (25% fat)
100g of milk
Separate the yolks from the proteins. Mix the proteins and 350g of sugar using a hand mixer so it becomes a dense foam. In a separate bowl mix the yolks alone just just a little bit, so it becomes smooth. Then, slowly and gently, put the yolk mass into the proteins and blend it very gently- no rush movements, so the foam doesn’t “fall”. Add 1 tea spoon of the baking soda and 500g of flour and blend it well. Add 300g of chopped dried apricots, prunes, raisins and walnuts (each 300g) and blend. Spread the mass in small pieces of cakes (1 or 2 spoon sized) on 2 baking sheets.
Prepare the oven and bake at 180ᴼ C 15-20 minutes (without opening the oven door).
Mix 200g of butter with 150g of sugar with a fork, then add 1kg of sour cream to the mix.
Grease each little cake with the cream and put it on the big platter.
Put 4 big spoons of milk and 200g of butter into a small pan and heat it. Then add 4 tea spoons of cocoa powder and blent it while heating until it becomes smooth. Pour the chocolate glaze on the top of the cake.
